SOUTHERN
STYLE APPLESAUCE
Prep time: 10 minutes
Ingredients
2 small red apples
2 tbsp. lemon juice
2 tsp. sugar
2 pinches of cinnamon
Utensils
Knife (you'll need
help from your adult assistant)
Blender or food processor
Measuring spoons
Serving bowls
Directions
Peel the apples and
cut them into small pieces. Throw out the core.
Put the apple pieces
and lemon juice into the blender or food processor.
Blend until the mixture
is very smooth.
Pour the mixture
into two small bowls and stir in the sugar and cinnamon.
Enjoy your awesome
applesauce!

homemade bread or biscuits. Well, that'll take a while to bake. So, in
the mean time, why not make some . . .

MADE BUTTER?
Wow! This is
going to be great. And, it can be very good exercise as well. Of course,
you can use egg beaters, blenders and lot's of other gadgets but, I think
the most fun way to do this is in a large pickle jar (with a tight fitting
lid). Here's what to do:
Get a pint of EXTRA
HEAVY WHIPPING CREAM. Pour cream into the pickle jar and add about 1/2
tea spoon of table salt. If the cream is cold allow it to stand until it
approaches room temperature. This will let it process faster.
After a few minutes
of warming, start shaking the jar up and down vigorously. If you have a
brother, sister or friend you may want some help to do this. After a time,
the cream will get fluffy and light and - just like magic - turns itself
into WHIPPED CREAM!
Don't spent too much
time admiring the mixture at this point. Keep on shaking and shaking the
jar until you feel and hear a large clump of "stuff" flopping around inside.
Then, keep shaking until a maximum amount of liquid appears around the
butter. This is REAL BUTTERMILK. Don't pour it out. Pour it into a glass.
You will never think you don't like buttermilk again. This butter milk
has skim milk, tiny flakes of butter and almost no milk fat. It doesn't
taste sour, bitter, salty or have a lumpy texture. You'll love it! Oh,
by the way, that big chunk of goo in the jar - that's fresh HOME MADE BUTTER!
Spread some on mom's bread or biscuits and yummy, yum! A word of caution
here. If you make this and eat it you may never like margarine or cultured
buttermilk again. This is the real thing "just like great grandma used
to make".

BAGEL
PIZZA
In a recent phone
conversation with my grandson, he related a new treat that he had put together
at the farm. He calls it "Bagel Pizza".
Here's how to make
it:
Using a sliced Bagel,
spread herb and tomato pizza sauce (he also uses spaghetti sauce in a pinch)
on each of the flat sides. Add toppings such as sliced pepperoni, cheeses,
sausage, ground beef, mushrooms; etc. Place in a microwave for about 3
minutes on low. When done you have a treat that can't be beat!
(And you don't have
to wait for the door bell)
